Agbeli Kaklo Recipe
What do you do with excess cassava gifted to you over the holidays? Well we decided to make this popular Ghanaian street snack, Agbeli Kaklo. Not only was it satisfying but we also discovered that it’s a very versatile snack and we could stuff it with both savory and sweet filling to make it a whole meal as you would spring rolls or samosas.
Ingredients: -2 cups grated cassava (use the finest side of your grater)
-1 small onion diced
-Some salt to your desired taste
How to make it:
1. Using a clean kitchen towel, strain out the liquid in the grated cassava and transfer into a mixing bowl
2. Add the diced onions and some salt to taste and mix thoroughly
3. Mould into balls and deep fry until golden brown (you may use an icecream scoop to scoop and then mould with your hands)
If stuffing the Agbeli Kaklo;
scoop with the icecream scoop and make sure to compact it.
Place the scooped mixture into a clean cling film and press it down to flatten into a disk
Add your favourite filling in the middle and with the aid of the cling film, slowly take the edges of the cassava mixture and pull it over the filling as if you are typing the film
Deep fry until golden brown and serve warm or completely cooled
